A specific savoir-faire in artisanal cachaça

Each sprig of sugar cane is chosen and harvested by hand according to its ripening. It is then crushed immediately to preserve its optimal freshness.


The alliance between the microclimate of the plantation and the variety of sugar cane gives birth to a unique yeast that produces a 100% natural fermentation.


Soft distillation with a progressive heating in a small copper still allows to perpetuate the tradition and to elaborate a small-batch cachaça rich in aromas.

Our first blend:

Jequitiba – Minas Gerais
 

The Jequitiba tree has always been an emblematic element of the Minas Gerais region.

The tree was already venerated by the Tupi-Guarani people thanks to its many ancestral virtues.

 

After a first maturation in stainless steel barrels, our Gaya Jequitiba-MG blend is transferred to Jequitiba Rose barrels in order to accentuate the diversity of aromas.

 

The absence of filtration processes preserves the aromas of fresh cane juice and white flowers while retaining a touch of Amerindian shamanism.

 

A second blend from another brazilian terroir will soon complete the Gaya offer. Patience, Mother Nature is working...

Respect for nature

Gaya wants to guarantee the respect for nature and its biodiversity.

 

We strive to minimize our carbon impact throughout the production process:

  • Vinhoto: the surplus of the distillation is used to water and bring natural fertilizer to our plantations.

  • Bagasse: The fibrous residue of the sugar cane is used as fuel for the still.

  • Water: Water is used for cooling the stills only in closed circuit.

  • Aging : For every barrel of Jequitiba used, ten trees are replanted on our plantation.

  • Logistics: Small deliveries in Paris are made by bicycle.

 

Respecting nature also means respecting its natural cycles. We always prioritize seasonal fruits in our cocktails.
